For example, our chef knife has a balance point higher up on the blade to benefit a high pinch grip, while our slicing knife has a balance point further back to support a sturdier grip on the handle combined with a light pinch grip.

It took 6 years of development and fine-tuning before our first knives became exactly what we wanted them to be; some things just can’t be rushed. Deciding on the hardness of the blades, the choice of steels to encase the core steel, and determining the best-suited grind were all details that kept us up at night.
